Happy New Year! I hope this finds you in good health.
The holiday season was good old fashioned country Wilbur. The water that we needed and wanted arrived -- and kept on coming. As the saying goes, be careful what you wish for! As the creek under the hotel rose and overflowed, the pool filled with mud. (We thought for a moment about offering mud baths to our guests but decided against it . ) Richard, Rick and Rory shoveled as guests warmed themselves in the hot mineral waters. All things considered , Wilbur sustained only modest damage from the winter storms and a good time was had by all.
New Year's Eve was a gala event, with a full house enjoying the gastronomic delights created by renowned Esalen chefs Charlie and Marion Cascio.

About Charlie & Marion Cascio
Charlie Cascio, internationally renowned chef, restaurateur, natural foods consultant and lecturer, has taught and worked throughout the United States and Europe for the past 34 years. His award-winning cuisine has garnered rave reviews in both the US and Europe . Recently retired as the head chef for the Esalen Institute, Charlie has been devoting his time to writing a cookbook commissioned by Esalen. He appears frequently as guest chef for both Wilbur Hot Springs and Esalen.Marion Cascio was born into a family of chefs and began her involvement with fine restaurants in early childhood. Her five-year study of the culinary arts at a prestigious cooking school in Germany led her to work in many highly regarded restaurants and spas where her superb talents have been well received . Marion is known especially for her sumptuous desserts that push the sated diner over a blissful edge. For the past five years, Marion has been a staff chef at the Esalen Institute.
Charlie and Marion live self-sufficiently on land in Big Sur, where they keep goats, bees, chickens and an abundant organic garden. The love and joy they have for their art is immediately apparent in their fabulous fare. During their weekends at Wilbur, they marry healthy, organic cuisine with exceptional taste.

WILBUR GOES TO THE DOGS
This spring will see the first in a series of weekend special events in response to your requests. The upcoming event will be a "Dogs at Wilbur Weekend." Guests who reserve rooms will be welcome to bring one dog per human. Food for humans and their dogs will be catered. Watch the web site for dates and information as Wilbur "goes to the dogs."
As you may recall I live at Wilbur for a few days every two weeks. I arrive on Thursday late afternoon. In the evenings I have time to read; I have moved on from Thomas Paine and am now engrossed in James Madison. Each time I find a founding father who appears to stand above the others, it is only a short time before I find another equally outstanding. Our Declaration of Independence, American Revolution and Constitution combine to make the greatest action adventure the world has ever known.
